Vegan Zucchini Brownies
1 cup all purpose flour
1/3 cup cocoa powder
3/4 tsp baking soda
1/4 tsp salt
2/3 cup jaggery
1/4 cup oil
1 tsp vanilla essence
1 cup grated zucchini
1/4 cup water
Combine dry ingredients (flour, cocoa powder, baking soda and salt) and set aside.
Combine wet ingredients (jaggery, oil and vanilla essence) and set aside.
Mix the dry and wet ingredients.
Add zucchini and water to the mixture.
Top it up with dry nuts (optional)
Mix and bake for 18 minutes on 175 degree Celsius.
