Vegan Zucchini Brownies

  • 1 cup all purpose flour

  • 1/3 cup cocoa powder

  • 3/4 tsp baking soda

  • 1/4 tsp salt

  • 2/3 cup jaggery

  • 1/4 cup oil

  • 1 tsp vanilla essence

  • 1 cup grated zucchini

  • 1/4 cup water

Method

  • Combine dry ingredients (flour, cocoa powder, baking soda and salt) and set aside.

  • Combine wet ingredients (jaggery, oil and vanilla essence) and set aside.

  • Mix the dry and wet ingredients.

  • Add zucchini and water to the mixture.

  • Top it up with dry nuts (optional)

  • Mix and bake for 18 minutes on 175 degree Celsius.
