Summer Soba Salad

Ingredients

  • Evergreen Fresh's vegetables: Red cherry tomatoes, Zucchini, Tender stem Broccoli and yellow capsicums

  • Soba noodles

  • Tofu

  • Soya sauce

  • Salt and pepper to taste

  • Black sesame seeds - optional

Method

  • Chop vegetables as per your requirement, you can cut Zucchini ribbons as shown in the picture.

  • Roast black sesame seeds for garnish.

  • Boil and cook the soba noodles until tender.

  • Shallow fry tofu on both sides until cooked well.

  • Steam edamame beans until cooked well.

  • Display all the ingredients in your bowl and simply enjoy with soya sauce or any other sauce of your choice.
