Bacon and Egg Breakfast Mushrooms
1 pack Majestic breakfast mushrooms
1 small red onion, finely chopped
Cooked collar bacon, chopped
2 whole eggs
Salt and pepper
Grated cheese, optional
Start by preheating the oven at 350 degrees C.
Clean the mushrooms with a damp towel and remove the stem, finely chop the stem and scoop out the inside of the mushroom.
In a pan over medium heat, heat some little oil and add the chopped mushroom steam and onions and cook for a few minutes, until onions have softened.
Stir in the cooked bacon and the chives and turn off the heat.
Lightly oil the tops of the breakfast mushrooms and place them on a baking dish, top side down.
Fill the inside of the mushrooms with the onion and bacon mixture, then gently break each egg into each mushroom. Season with salt and black pepper.
Sprinkle over some cheese on the edges.
Bake for 7-9 minutes, then broil for 3 minutes or until the yolks are set to your liking.
Sprinkle over the extra chives and enjoy.
