Creamy Tomato Soup

  • Mix in 750g of tomatoes with 6 cloves garlic, halved onion and one medium sweet potato with olive oil, and salt

  • Bake for 30 mins and finely purée it

  • If the soup is too thick add some veggie stock or water

  • Add in oregano, black pepper, chilli flakes and chopped basil and serve with a hearty bread
