1 small red onion, slice thinly
3 garlic cloves, finely chopped
1 pack Farm Fresh baby corn, sliced diagonally
2 medium carrots, sliced diagonally
½ red bell pepper, diced
½ green bell pepper, diced
Salt and pepper to taste
In a large pan or wok heat about two tablespoons on oil
Add the onions and cook until translucent.
Add the garlic and cook until fragrant.
Add the baby corn, carrots and the bell peppers.
Stir continuously to cook. Cook for 5-7 minutes. The vegetables will be cooked but still crunchy.
Season with salt and pepper
